Chopped salad is a great way to get lots of veggies in your diet in one dish. They’re so easy to make too.
Just choose your favorite veggies found at your farmers market, chop them up and serve with a little olive oil drizzled over it or some salad dressing. For this salad I chopped up an English cucumber, some grape tomatoes and radishes, a zucchini, an avocado, and half an orange bell pepper.
Drizzle a little Ranch dressing over the chopped salad and enjoy.
- 1 English cucumber
- 1 zucchini
- 10 grape tomatoes
- 10 radishes
- 1 avocado
- ½ orange bell pepper
- Dice all vegetables.
- Toss and serve.
- Top with a little olive oil or salad dressing.
