Warm and delicious, these sugar free apple dumplings are incredible by themselves or with sugar free coconut milk ice cream.

Ingredients
gluten free pie crust - I used my pie crust recipe from my apple pie
2 large Granny Smith apples
½ cup butter
½ cup xylitol
1 tablespoon cinnamon
1 teaspoon vanilla
½ cup Mountain Zevia
Instructions
Roll out the dough between two pieces of parchment paper to about 10x14 inches. Cut it into 8 rectangles and cut each of them diagonally into two triangles.
Peel the two apples and cut each into 8 slices. Roll up a slice of apple in each triangle of dough and lay them in a 9x13 baking dish sprayed with cooking spray.
Melt ½ cup of butter in a saucepan. Add xylitol, vanilla, and cinnamon and stir. You want it to be lumpy and grainy. Pour the mixture over the dumplings.
Pour ½ cup of Mountain Zevia around the edges of the dumplings.
Bake at 350 degrees for about 40 minutes.
