Avocado Vinaigrette
 
 
This avocado vinaigrette makes a wonderful and tasty dressing for any salad.

Ingredients
  • 1 small avocado
  • 1 jalapeno - deseeded and deveined and cut into chunks
  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup filtered water
  • 1 tablespoon fresh cilantro
  • 1 teaspoon fresh dill
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
Instructions
  1. Cut the avocado in half, take out the seed and scoop into blender. Make sure it doesn't have brown spots or it will discolor the dressing. I usually use the whole avocado, but if you want a little thinner dressing just use half of the avocado. You can always add the other half in if you do not like the consistency.
  2. Add all other ingredients to the blender and blend until smooth.
  3. Store in an airtight container in the refrigerator for up to 3 days.
