My family loves these sugar free glazed carrots. These last few years I haven’t been able to eat carrots because they contain too much sugar. Recently I’ve been able to eat a few on occasion and decided to surprise Rod with sugar free glazed carrots for supper.
Carrots naturally have enough sugar in them that you do not need to add brown sugar to caramelize them. I like to cook them in a skillet instead of in the oven. When the water gets low you add the butter and saute them until lightly browned. This caramelizes them.
- 1 pound baby carrots
- filtered water
- 3-4 tablespoons butter - use Ghee for Paleo diet, Earth Balance if Vegan
- sea salt
- ¼ cup sliced almonds
- In skillet cover carrots with filtered water. Heat to boil then turn down to medium heat and cook for 20 minutes or until carrots are softened. Drain any leftover water off.
- Add butter and season to taste with salt and pepper. Saute until lightly browned. This lets you know that they have caramelized. Add a little extra butter if needed.
- Add sliced almonds and serve hot.
