Ingredients
- 1 large cucumber
- 2-3 small Roma tomatoes
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon chopped fresh dill
- ¼ teaspoon sea salt
Instructions
- Peel, then slice cucumber into thin slices.
- Slice Roma tomatoes.
- Layer cucumbers and tomatoes in salad bowl.
- Whisk oil, vinegar, dill, and salt together in small bowl. Pour over tomatoes and cucumber.
- Best if covered and chilled in refrigerator for at least 2 hours before serving to let the vegetables soak up the flavor of the dressing..
