Heat oven to 375 degrees. Cover cookie sheet with nonstick foil and place chicken breasts on it. Drizzle olive oil on chicken breasts then sprinkle with Italian seasoning. Bake for 30 minutes.
Slice lemons into thin slices. In skillet saute` lemon slices in 1 tablespoon olive oil until soft and lightly browned.
In small sauce pan saute` minced garlic and tomatoes in 1 tablespoon olive oil for a couple minutes. Add the goat cheese and stir constantly on medium low heat until melted. Be careful not to burn it. It will be pretty thick. Add 4 - 5 tablespoons unsweetened coconut milk as needed to thin it out a little. Add parsley.
Right before serving pour over chicken breasts and add lemon slices on top.
