Author: Thyme and Tarragon
Recipe type: Dessert
Serves: 6
Ingredients
1 and ¾ cup fresh or frozen blueberries
⅔ cup unsweetened plain coconut milk yogurt
juice of 1 lime
⅓ cup filtered water
¼ - ½ teaspoon liquid stevia
Instructions
Depending on how sweet you like your popsicles add ¼ to ½ teaspoon liquid stevia. Blueberries to me don't need a lot of extra sweetness so I just added ¼ teaspoon but just go by your preferred taste.
Using a good blender - I used my Nutribullet - blend all ingredients until smooth.
Once smooth, spoon or pour into popsicle molds and insert popsicle sticks if they came with the popsicle mold. If not then freeze for 2 hours and insert a wooden popsicle stick into the middle of each mold.
Freeze for 6 hours or overnight until popsicles are frozen through.
