Keep cool this summer with these creamy sugar free mint yogurt popsicles.

Ingredients
1 cup canned full fat coconut milk
⅓ cup unsweetened vanilla coconut milk yogurt
1 teaspoon peppermint extract
½ teaspoon liquid stevia
Instructions
Mix all ingredients until well blended. Canned coconut milk sometimes has small chunks of coconut pulp in it so I use my Nutri-bullet to make sure the chunks are gone.
Pour into either small cups or popsicle mold. The cups I used were 8 ounce cups.
If you are using small cups freeze for two hours before inserting the popsicle sticks in the middle. Then freeze for another 4-6 hours or overnight.
If you have popsicle molds freeze for at least 6 hours or overnight.
