Yuletide Green Beans

These festive green beans are very versatile and go well with any main dish. This recipe is also very easy to convert to vegan.

Ingredients
  • 1 pound green beans
  • 1 tablespoon ghee - or goat butter, if vegan use vegan butter
  • 1 tablespoon olive oil
  • ½ medium yellow onion finely chopped
  • 1 heaping tablespoon minced garlic
  • ½ cup chicken or vegetable broth
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1 teaspoon crushed rosemary
  • ¼ cup cranberries
  • chopped pecans or sliced almonds (optional)
Instructions
  1. Snap the stem off the green beans and then snap them in half.
  2. In large skillet sauté onions and garlic for a minute.
  3. Add green beans and cook for another minute until the beans turn bright green.
  4. Add sea salt, pepper, rosemary, and broth. Bring to a boil, turn heat to medium-low and simmer for 15 minutes.
  5. Add cranberries and nuts (optional) and cook for another five minutes.
  6. Serve hot.
