Gluten Free Chicken Pasta
 
 
With less than 10 ingredients this gluten free chicken pasta is a quick and simple meal for those days you don't have a lot of time to cook.

Ingredients
  • 3 cups shredded tamari chicken or other shredded roasted chicken
  • 12 ounce bag of gluten free pasta
  • 1 bunch asparagus
  • ½ container of grape tomatoes
  • 1 handful fresh cilantro - chopped
  • 1 handful fresh parsley - chopped
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
Instructions
  1. Snap tough ends off asparagus and discard. Snap each asparagus spear into three pieces and set aside.
  2. Cook gluten free pasta according to directions on package. Add asparagus to pasta the last one to two minutes of cooking. Drain pasta and asparagus and put in large serving bowl.
  3. In skillet saute tomatoes, garlic, parsley, and cilantro in olive oil for a couple of minutes. Do not overcook or the tomatoes will get too soft and flatten.
  4. Add sautéed tomatoes and shredded chicken to pasta and gently toss.
  5. Serve immediately.
