Bursting with flavor the fresh cilantro, mint, green onions, lime and mango make a great combination with the sweet baby leaf lettuce and black beans.
The lime juice acts as the dressing making the salad light and fresh.
Mango Cilantro Lime Salad

Ingredients
- 5 ounce container of sweet baby leaf lettuce
- 2 large mangos
- 15 ounce can black beans - drained and rinsed well
- 3 green onions
- 1 bunch cilantro
- 2 sprigs mint leaves
- juice of 2 limes
Instructions
- Peel the mangos and cut the mangos into chunks. Slice the green onions and chop the cilantro and mint leaves. Mix together.
- Place lettuce on salad platter and add the black beans on top.
- Add the mango mixture on top of the black beans and squeeze juice of limes over the salad.
- Serve!
