This paleo grapefruit smoothie is a refreshing way to start your day.
Several years ago my husband, Rod, decided to plant some citrus fruit trees in our back yard. Last year our grapefruit tree had a big crop so I started playing around with recipes trying to come up with ways to use these surplus grapefruit.
This paleo grapefruit smoothie, made with grapefruit, lime and coconut milk has a tropical flavor with a hint of mint and is my favorite. Depending on how much ice you add you can have a cold drink, a smoothie, or an iced dessert like a snow cone.
Minty Grapefruit Smoothie (Paleo & Vegan)
This paleo grapefruit smoothie makes a great breakfast or a refreshing snack. Add more ice and you have an iced dessert for those hot summer days.

Ingredients
- 1 grapefruit
- 1 lime
- 1 cup unsweetened coconut milk
- ½ teaspoon liquid stevia
- 1 sprig fresh mint
- 1 cup ice
Instructions
- Using a manual juicer, juice grapefruit and lime and put in blender. (I used my Nutribullet.)
- Add the unsweetened coconut milk, sprig of mint, liquid stevia, and ice and blend until smooth.
- Pour into glass and serve immediately.
