No bake energy bites…a simple and healthy snack on the go.
Several months ago my sister, Deborah, brought me some yummy energy balls her mother-in-law had made. They were delicious and so easy to make. She mixed chopped dates with almond butter and rolled them in unsweetened shredded coconut. I adapted her recipe slightly by adding a little vanilla and ground flax seed meal.
With just 5 ingredients and 15 minutes you can make these scrumptious energy bites to keep on hand to stave off those terrible hunger attacks you get throughout the day.

Ingredients
- ½ cup unsweetened almond butter
- 8 pitted medjool dates - chopped
- 1 tablespoon ground flaxseed meal
- 1 teaspoon vanilla
- 3 tablespoons unsweetened shredded coconut
Instructions
- In medium bowl mix almond butter, chopped dates, flaxseed meal, and vanilla until combined.
- Roll into ¾ inch balls.
- Roll balls in shredded coconut. Or, if you don't like coconut you can use finely chopped nuts or cocoa powder to coat the balls. Although I have not tried it, I have seen where people use matcha tea powder to coat their energy balls. So if your adventurous try something new and different.
- Store in airtight container in refrigerator.
