Mmmm…. the aroma of these paleo brownies baking makes my mouth water.
Who doesn’t like brownies? Brownies are one of my favorite desserts. From the fudgy and ooey gooey to those more on the cake-y side, I love them all. These amazing brownies are of the cake-y variety and so moist, minty, and chocolate-y.
Just thinking about these paleo brownies makes me want one to munch on…. or two or three.
Paleo Mint Brownies
These amazing paleo brownies are super moist, minty, and chocolate-y. You won't be able to stop with just one.

Ingredients
- 1 and ⅓ cups almond flour - I use Wellbee's
- ¾ cup xylitol powdered
- ⅔ cup cocoa powder
- ¼ teaspoon baking soda
- ¼ teaspoon sea salt
- ⅔ cup coconut oil melted
- 4 eggs - room temperature
- 1 and ½ tablespoons vanilla
- 1 and ½ teaspoons peppermint extract
Instructions
- Heat coconut oil just enough to melt and set aside.
- Powder xylitol in blender and pour into large bowl. Add almond flour, cocoa, baking soda, and salt and whisk until mixed.
- Add vanilla, peppermint, and eggs to coconut oil and whisk until mixed well. Add to dry ingredients and mix.
- Spray 9x9 pan with cooking spray. Pour brownie mix in pan.
- Bake at 350 degrees for 25-30 minutes until center no longer jiggles.
- Let cool before cutting.
