Apple cinnamon overnight oats make a scrumptious breakfast meal, almost like you’re eating apple crumble pie for breakfast. My daughter introduced me to overnight oats a couple years ago and since then I’ve enjoyed a variety of flavors.
Overnight oats are a quick and easy way to make breakfast. All you need is a pint jar with a lid, some oats, some liquids, and some toppings of your choice. Put it in the refrigerator overnight and in the morning you have a healthy, delicious breakfast that will keep you feeling full for hours.
There are many different combinations of flavors to choose from. However, I wanted this recipe to remind you of apple crumble pie while eating. I hope you enjoy this recipe as much as I do.
- ½ cup gluten free rolled oats
- ⅔ cup unsweetened coconut milk
- ½ apple cored and cut into chunks
- 1 tablespoon chopped pecans
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 0-2 full droppers liquid stevia
- Mix oats, coconut milk, pecans, vanilla, stevia, and cinnamon in pint jar.
- Cover with lid and refrigerate overnight.
- Add chopped apple in the morning and enjoy.
- Optional: Add a few chopped pecans and sprinkle a little cinnamon top.
