Blueberry Yogurt Popsicles (SF & DF)

Houston in June is warm and humid…..these sugar free blueberry yogurt popsicles are just the snack to cool you off.

Vegan, Paleo, dairy free, and sugar free, with only 4 ingredients these popsicles are not only super easy to make but a healthy and delicious frozen treat.  Cold, tart, and tangy they burst with flavor with every bite you take.

The flavor actually reminds me of this amazing blueberry gelato ice cream from this Italian ice cream place in Vienna.  When I was a kid it was a big treat to go there in the summer for some delicious ice cream.

There’s nothing like Italian ice cream!  I am a chocoholic but I always got half chocolate and half blueberry, that’s how good this blueberry ice cream was.

Anyway, I made some popsicles for Rod and I to enjoy over Memorial Day weekend.  And every time I ate one of these delicious blueberry yogurt popsicles it took me back to summers in Austria.

Dairy free, sugar free, Vegan, and Paleo these blueberry yogurt popsicles are a healthy frozen treat to enjoy this summer.

Serves: 6
Ingredients
  • 1 and ¾ cup fresh or frozen blueberries
  • ⅔ cup unsweetened plain coconut milk yogurt
  • juice of 1 lime
  • ⅓ cup filtered water
  • ¼ - ½ teaspoon liquid stevia
Instructions
  1. Depending on how sweet you like your popsicles add ¼ to ½ teaspoon liquid stevia. Blueberries to me don't need a lot of extra sweetness so I just added ¼ teaspoon but just go by your preferred taste.
  2. Using a good blender - I used my Nutribullet - blend all ingredients until smooth.
  3. Once smooth, spoon or pour into popsicle molds and insert popsicle sticks if they came with the popsicle mold. If not then freeze for 2 hours and insert a wooden popsicle stick into the middle of each mold.
  4. Freeze for 6 hours or overnight until popsicles are frozen through.
