Breakfast Kefir

Breakfast kefir …. very berry, tart, slightly sweet, nutty and with only 3 ingredients makes a quick and delicious breakfast or snack.

For several years now I have been using unsweetened goat kefir or yogurt in place of sour cream or heavy cream in my recipes.  Kefir is very similar to yogurt just a little thinner in texture.  It contains live cultures which are so important for your digestive system.  When you cook with it the live cultures die so I have been trying to come up with recipes where the kefir is not heated up.

Kefir by itself is too tangy for my liking but since it is similar to yogurt why not make my own fruit “yogurt” with kefir?  I mixed in some of my delicious blueberry sauce I had on hand and some chopped walnuts and low and behold I had a very yummy snack.

Michaela had some while she was visiting but used unsweetened coconut milk yogurt instead.  I recently found this website called body ecology which talks about young green coconut kefir and how to make it.  I have never tried it before but it sounded interesting and might be an option for those on the Paleo diet and Vegan, or just use coconut milk yogurt.

This breakfast kefir has become my new favorite breakfast and snack, so be adventurous and try some!

With only 3 ingredients the very berry, tart, slightly sweet, and nutty breakfast kefir makes a quick and delicious breakfast or snack.

Ingredients
  • ⅓ cup unsweetened goat kefir Vegan and Paleo diet use unsweetened plain coconut milk yogurt
  • ¼ cup my sugar free blueberry sauce
  • 1 tablespoon finely chopped walnuts or chia seeds
Instructions
  1. Stir kefir and blueberry sauce together.
  2. Sprinkle chopped walnuts or chia seeds on top.
  3. Enjoy.
