VBS has been wonderful this week but has kept me very busy so yesterday I made this delicious gluten free slow-cooker pot roast.
It’s so quick and easy, just throw everything in the crockpot in the morning, turn it on high for 6 hours (or on low for 10 hours) and it will be ready for dinner time. If you want a one pot meal add some carrots and potatoes in the crockpot with the roast and you don’t have to make any side dishes.
This gluten free slow-cooker pot roast is also great for potluck dinners or company, especially if you are working all day and don’t have a lot of time before they show up.
Gluten Free Slow-Cooker Pot Roast
This gluten free slow-cooker pot roast is quick and easy....just throw everything in the crockpot, cook on high for 6 hours and it's ready to serve!

Ingredients
- 2 pounds beef chuck roast
- 1 cup gluten free broth
- 2 tablespoons tamari sauce
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- ½ tablespoon chives
- ½ tablespoon dill
- ½ cup unsweetened goat kefir or goat yogurt
Instructions
- Put roast in crockpot and pour tamari sauce over it.
- Then sprinkle the minced garlic, Italian seasoning, chives and dill over roast.
- Pour broth gently over the roast so that some of the seasoning gets mixed in with the broth but most of it stays on the roast.
- Turn crockpot on high and cook for 6 hours or on low for 10 hours.
- Add goat kefir or yogurt to broth and stir until combined before serving. If you cannot eat goat kefir or yogurt you can try unsweetened coconut milk yogurt instead or just leave it out.
- Optional: Cut up some carrots and potatoes and add around roast before cooking for a one-pot meal.
