Christmas is just around the corner so I wanted to share these gluten free sugar free ginger cookies with you.  These ginger cookies along with my Christmas cookies are perfect for sharing with company or giving as a gift to friends and family.

My daughter Josha loves ginger snap cookies, especially her Aunt Angela’s recipe.  For several years now I have tried to make ginger snap cookies that are gluten and sugar free but have not had any success.

Recently I tried again and came up with these delicious gluten free sugar free ginger cookies.  I added my sisters secret ingredient, cayenne pepper, which gives these cookies a little kick.  Josha is still holding out for the ginger snap cookies that taste just like her aunt’s but otherwise they were a huge success over Thanksgiving.

These gluten free sugar free ginger cookies have a secret ingredient that gives them a little kick.

Serves: 6 dozen
Ingredients
  • ¾ cup xylitol, powdered - I used my Nutribullet
  • ¾ cup coconut oil
  • 1 egg
  • 2 cups almond flour - I used Wellbee's
  • 2 teaspoons baking soda
  • 2 and ½ teaspoons ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon sea salt
  • ¼ teaspoon cayenne pepper
Instructions
  1. In mixing bowl beat xylitol, coconut oil, and egg together.
  2. In medium bowl whisk almond flour, baking soda, ginger, cinnamon, cloves, salt, and cayenne pepper. Add to liquid ingredients and mix.
  3. Cover and refrigerate for 1 hour.
  4. Cover cookie sheet with parchment paper.
  5. Shape dough into small balls and place 2 inches apart on cookie sheet.
  6. Bake at 375 degrees for 10-12 minutes or until lightly browned.
  7. Let cool. Then remove from parchment paper.
