If you’ve never tried quinoa before you don’t know what your missing. This simple recipe of quinoa and greens is a good way to try some quinoa for the first time.
Quick and easy, it’s a perfect side dish that takes very little time and effort. I needed a side dish that was quick and filling the other day. Something came up and I didn’t have time to cook what I had planned.
So I looked in the pantry to see what I had on hand that I could throw together to make a quick meal. I had 2/3 cup red quinoa and 1/3 cup white quinoa, some greens off of a daikon radish, chicken broth and some herbs to go with my chicken breasts. And that is how this delicious quinoa and greens recipe was created.
- 1 cup quinoa - any color or combination of colors
- 2 cups broth - I used chicken but vegetable broth will work just as well
- 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
- 1 tablespoon parsley
- 2 cups chopped greens of any kind - spinach, kale, collard, greens from daikon radish etc.
- Chop greens and set aside. You can use any type of greens you like. I use spinach or kale a lot because we like them. Here lately I've used the greens from a daikon radish because my husband is growing some this summer and they are readily available.
- Rinse the quinoa. In medium pot bring quinoa, broth (chicken or vegetable), parsley, and rosemary to a boil then cover and simmer on low heat for 15 minutes.
- Add chopped greens, cover and cook for one more minute.
- Remove from heat and mix quinoa with the greens.
- Serve hot.
