Lemon Chicken With Goat Cheese Sauce

This amazing chicken with goat cheese sauce recipe is so good I just had to share it with you.

A couple of years ago we were visiting my parents and my mom made this wonderful gluten free pasta with goat cheese sauce.  A few weeks later Michaela was cooking dinner and created this delicious chicken with goat cheese sauce.

The chicken breasts, drizzled with olive oil and seasoned with Italian seasoning, are baked then topped with creamy goat cheese sauce and sautéed lemon slices.  Add some roasted veggies and you’ve got a balanced meal that’s ready in 40 minutes with very little effort.

Chicken with goat cheese sauce... drizzled with olive oil and Italian seasoning, baked then topped with creamy goat cheese sauce and sautéed lemon slices.

Ingredients
  • 4 chicken breasts
  • Italian seasoning
  • olive oil
  • 8 ounces soft goat cheese
  • 4 tablespoons unsweetened coconut milk
  • 1 tablespoon minced garlic
  • 12 grape tomatoes
  • 2 lemons - thinly sliced
  • handful fresh parsley - chopped
Instructions
  1. Heat oven to 375 degrees. Cover cookie sheet with nonstick foil and place chicken breasts on it. Drizzle olive oil on chicken breasts then sprinkle with Italian seasoning. Bake for 30 minutes.
  2. Slice lemons into thin slices. In skillet saute` lemon slices in 1 tablespoon olive oil until soft and lightly browned.
  3. In small sauce pan saute` minced garlic and tomatoes in 1 tablespoon olive oil for a couple minutes. Add the goat cheese and stir constantly on medium low heat until melted. Be careful not to burn it. It will be pretty thick. Add 4 - 5 tablespoons unsweetened coconut milk as needed to thin it out a little. Add parsley.
  4. Right before serving pour over chicken breasts and add lemon slices on top.
