Mediterranean salad with fresh tomato dressing…. serve with grilled chicken or shrimp and you have a quick and easy flavor packed meal.
Here lately I have been craving salads so I fixed this zesty salad the other day for lunch. Instead of adding tomatoes in the salad I decided to top it with a tomato dressing. If you are like some of my friends and do not care for tomatoes, drizzle some traditional Greek dressing over your salad instead. To make this salad vegan and Paleo friendly just change the goat feta cheese to vegan feta cheese or a nut based feta cheese.
Made with tart goat cheese, crunchy almonds, rich fruity kalamata olives, and earthy kale this Mediterranean salad is sure to become a weeknight favorite.
- For the salad:
- 4 cups romaine lettuce - loosely chopped or torn
- 4 cups kale - loosely chopped or torn and stem removed
- ⅓ cucumber peeled and sliced thin
- ¼ cup Kalamata olives
- ¼ cup Feta cheese - goat, or vegan or nut feta cheese
- sliced almonds
- Tomato dressing:
- 1 small tomato
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon filtered water
- 1 clove garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- In large salad bowl toss romaine, kale, olives, cucumbers, and feta cheese together. Sprinkle some sliced almonds on top.
- Chop tomato into chunks and put in blender. Add olive oil, apple cider vinegar, water, garlic clove, basil, and oregano. Blend until smooth.
- Top salad with tomato dressing and serve.
