I’ve been in the mood for sugar free apple dumplings for a while now. I finally got around to making them this weekend and boy are they good.
I used my gluten free piecrust recipe I made my apple pie with. First I rolled out the dough and cut it into 8 rectangles and cut each of them diagonally into two triangles. Peel the two apples and cut each into 8 slices. Roll up a slice of apple in each triangle of dough and lay them in a 9×13 baking dish.
Then I melted some butter in a saucepan and added xylitol, vanilla, and cinnamon and stirred. You want it to be lumpy and grainy. Pour the mixture over the dumplings. Lastly, pour 1/2 cup of Mountain Zevia around the edges of the dumplings. Bake them for 40 minutes at 350 degrees. Enjoy!
- 2 large Granny Smith apples
- ½ cup butter
- ½ cup xylitol
- 1 tablespoon cinnamon
- 1 teaspoon vanilla
- ½ cup Mountain Zevia
- Roll out the dough between two pieces of parchment paper to about 10x14 inches. Cut it into 8 rectangles and cut each of them diagonally into two triangles.
- Peel the two apples and cut each into 8 slices. Roll up a slice of apple in each triangle of dough and lay them in a 9x13 baking dish sprayed with cooking spray.
- Melt ½ cup of butter in a saucepan. Add xylitol, vanilla, and cinnamon and stir. You want it to be lumpy and grainy. Pour the mixture over the dumplings.
- Pour ½ cup of Mountain Zevia around the edges of the dumplings.
- Bake at 350 degrees for about 40 minutes.
