These sugar free candied sweet potatoes are the perfect dish for Thanksgiving and Christmas dinner.

Ingredients
- 4 pounds sweet potatoes
- ½ cup filtered water
- ½ cup coconut oil
- 1 cup xylitol
- 3 teaspoon cinnamon
- 1 teaspoon nutmeg
- ½ cup chopped pecans
Instructions
- In large pot boil the sweet potatoes for 20-40 minutes. The sweet potatoes need to be softened but still firm otherwise they will fall apart.
- Let cool, then peel and slice into ½ inch slices.
- Spray 9x13 baking dish with cooking spray. Lay the sweet potato slices in rows in the pan overlapping them.
- In small sauce pan heat water, coconut oil, xylitol, cinnamon, and nutmeg until xylitol is dissolved.
- Sprinkle pecans over sweet potatoes, then pour the liquid mixture over the potatoes and pecans.
- Bake at 375 degrees for 30 minutes.
