The other day my daughter, Michaela, was telling me I need to make sugar free cucumber lime popsicles. I had never heard of that combination before, so I started searching online to see what I could list this recipe under. Come to find out, as usual I’m the last to know as there are all kinds of this recipe out there.
A lot of these recipes added mint to the cucumber and lime. I thought I’d add a pinch of chile to follow the Mexican tradition of adding something spicy to their paletas. I didn’t have any habanero chile on hand so I used cayenne pepper instead.
The lime and cucumber make these popsicles cool and refreshing while the cayenne gives them a slight bite. They are so good I couldn’t stop with just one. No worries though, with only 15 calories per popsicle these are practically guilt free. So beat the heat this summer with these sugar free cucumber lime popsicles.
- 1 seedless English cucumber
- juice of 2 limes
- 1 cup filtered water
- 1 teaspoon liquid stevia
- cayenne pepper
- Peel cucumber, cut into cubes and put in blender.
- Add lime juice, water, and liquid stevia to blender. Blend until smooth. It will foam up in the blender.
- Let sit for about 30 minutes to let the foam go down. Gently stir before pouring into molds.
- Sprinkle cayenne pepper in bottom of each mold before pouring mixture in. The amount of cayenne will depend on how fiery you want the popsicles to be. I used less than half of ⅛ teaspoon altogether (yes, I'm a wimp). Or you can leave the cayenne out if you prefer.
- Pour the cucumber/lime mixture into molds, add the popsicle sticks and freeze for at least 6 hours.
