This recipe makes enough for two regular coffee cups and is very easy to whip up. In a saucepan whisk the coconut milk, xylitol, cocoa, vanilla, and peppermint extract on medium heat until well mixed and heated through.
Pour into coffee cups, top with some coconut whipped cream and enjoy a delicious cup of sugar free peppermint hot chocolate.
