This last week the weather has been very hot and humid so we have been munching on these creamy sugar free mint yogurt popsicles to keep cool.
I’ve been thinking of ways to make something cold, creamy, and slightly sweet for a light summer treat or snack. So far I’ve shared my blueberry yogurt popsicles and these mint yogurt popsicles and plan to post my fudgsicle recipe in the near future. Made with vanilla coconut milk yogurt and canned coconut milk, these creamy popsicles have a hint of vanilla that blends well with the mint. The combination of flavors is absolutely scrumptious.
So when the hot sweltering weather gets to you, just prop up your feet and cool off with one of these delicious sugar free mint yogurt popsicles.
- 1 cup canned full fat coconut milk
- ⅓ cup unsweetened vanilla coconut milk yogurt
- 1 teaspoon peppermint extract
- ½ teaspoon liquid stevia
- Mix all ingredients until well blended. Canned coconut milk sometimes has small chunks of coconut pulp in it so I use my Nutri-bullet to make sure the chunks are gone.
- Pour into either small cups or popsicle mold. The cups I used were 8 ounce cups.
- If you are using small cups freeze for two hours before inserting the popsicle sticks in the middle. Then freeze for another 4-6 hours or overnight.
- If you have popsicle molds freeze for at least 6 hours or overnight.
