This morning as I sit here drinking my vegan pumpkin smoothie for breakfast I started thinking how blessed I am…. because of my food issues, my family is now eating healthier and I feel so much better than I have in years.
This vegan pumpkin smoothie is the perfect way to start your day. Did you know that pumpkins are very low in calories and rich in anti-oxidants, vitamins, minerals, and fiber? Pumpkins are not only high in vitamin A, which is good for your eye sight, but also vitamin C, E, and B complex. I added some cinnamon, which has anti-bacterial, anti-oxidant, and anti-inflammatory properties, and ginger, which helps with digestion, to spice it up a little. Add in some hemp seeds for protein, some unsweetened coconut milk, xylitol, and cloves. and you’ve got a balanced meal for breakfast.
I bought a couple of pie pumpkins the other day to make some roasted pumpkin seeds and Rod, my husband, asked me if you can eat raw pumpkin. After finding out you can I decided to try this vegan pumpkin smoothie with raw pumpkin and it tastes just as good. The color changes as you can see in the pictures… it is not as orange as the pumpkin puree but it tastes the same. So for those of you who are adventuresome or eat mostly raw vegan meals try the raw version of this vegan pumpkin smoothie.
- 1 and ½ cups unsweetened coconut milk
- ½ cup pumpkin puree or raw pumpkin cut in small chunks
- 1 and ½ tablespoons hemp seeds
- 1 tablespoon xylitol
- 1 teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon cloves
- 8 ice cubes
- Put all ingredients in a blender - I use my nutri-bullet.
- Blend on high until smooth.
- Pour into glass and serve.
