Yuletide Green Beans

Tis the season for these festive Paleo green beans!

I know, I was surprised when I saw all the Paleo green bean recipes on-line too.  But supposedly green beans are allowed on the Paleo diet so I decided to share this recipe just in time for the holidays.

Several years ago I came across Smart Balance butter spread with olive oil.  I loved the combined flavors of butter and olive oil.  Nowadays I use ghee or goat butter and olive oil to get the same flavor and love using this combination in my green bean recipe. You can easily substitute the ghee in this recipe with Earth Balance vegan buttery sticks to make it vegan.  Sautéing the onions in this combination fills your kitchen with a mouthwatering aroma you just can’t wait to taste.  The cranberries add a little color and that little extra zing to the flavor.  If you like nuts in recipes add a little chopped pecans or sliced almonds.

These festive green beans are very versatile and go well with any main dish. This recipe is also very easy to convert to vegan.

Ingredients
  • 1 pound green beans
  • 1 tablespoon ghee - or goat butter, if vegan use vegan butter
  • 1 tablespoon olive oil
  • ½ medium yellow onion finely chopped
  • 1 heaping tablespoon minced garlic
  • ½ cup chicken or vegetable broth
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1 teaspoon crushed rosemary
  • ¼ cup cranberries
  • chopped pecans or sliced almonds (optional)
Instructions
  1. Snap the stem off the green beans and then snap them in half.
  2. In large skillet sauté onions and garlic for a minute.
  3. Add green beans and cook for another minute until the beans turn bright green.
  4. Add sea salt, pepper, rosemary, and broth. Bring to a boil, turn heat to medium-low and simmer for 15 minutes.
  5. Add cranberries and nuts (optional) and cook for another five minutes.
  6. Serve hot.
