Paleo roasted salmon is an easy go-to for dinner in a rush. Just add some veggies or a salad and you have a great meal that takes very little time.
In this recipe I used my homemade all purpose seasoning to season the salmon, but if you don’t have any on hand you could use paprika, garlic, and maybe add a little ground mustard. Salmon does not take very long to cook so check it several times. If overcooked, salmon will become dry and tasteless. You want to check the thickest part of the salmon with a fork to see if it is done. When the flesh is opaque and the fish flakes easily it is ready to take out of the oven. Top the salmon with sautéed lemon and garlic slices and it is ready to serve.

- 2 pounds salmon
- 3 tablespoons butter or ghee divided
- All purpose seasoning
- 2 lemons sliced thin and seeds removed
- 3 cloves garlic sliced
- Cover baking sheet with foil and spray with cooking spray.
- Place salmon skin side down on foil lined baking sheet. Sprinkle with my all purpose seasoning mix or with paprika and garlic powder.
- Slice 2 tablespoons of butter, goat butter, or ghee and cover top of salmon.
- Depending on thickness of salmon roast at 425 degrees for 15-20 minutes. After 15 minutes check several times so it does not overcook. When flesh is opaque and fish flakes easily at thickest section it is done.
- Meanwhile heat rest of butter or ghee in skillet and saute` lemon and garlic slices until lightly browned.
- Transfer salmon to platter, top with lemon and garlic slices and serve.
