There are several eating establishments that serve burrito bowls that are very good. But sometimes you just want to stay home and enjoy a good meal so I want to share my delicious and filling vegan burrito bowl recipe with you.
It only takes about 30 minutes to make. Loaded with protein this bowl is very filling. While cooking the brown rice chop the tomatoes, onion, and cilantro. Then saute the onion and garlic for 2-3 minutes. Add the cilantro, tomatoes, and black beans and simmer on low for several minutes to soften the tomatoes. Coat the minced walnuts with the spices.
Add lime juice and chopped cilantro to rice and stir. Build your burrito bowl by putting the rice in first. Then add the black bean sauce, some chopped romaine lettuce, and the spicy walnuts. Lastly top with sliced avocados, my spicy avocado vinaigrette, and salsa.
- 1 and ½ cups dry brown rice
- 14.5 ounce can black beans - drained and rinsed
- 3 Roma tomatoes
- 4 cloves garlic minced
- 1 small yellow onion
- 2 cups chopped Romaine lettuce
- 1 bunch cilantro
- juice of 1 lime
- 1 cup minced walnuts
- 1 tablespoon paprika
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon cumin
- ¼ teaspoon onion powder
- Toppings: Optional
- sliced avocado
- spicy avocado vinaigrette
- salsa
- Cook brown rice according to directions on package.
- Meanwhile chop the tomatoes, onion, and cilantro and lettuce.
- Mix the seasonings together.
- In a small bowl coat the minced walnuts with 4 teaspoons of the seasoning mixture and set aside.
- Saute the onion and garlic for 2-3 minutes. Then add the tomatoes, the rest of the seasoning mixture, black beans and a little chopped cilantro. Simmer for 3-4 minutes then set aside.
- When rice is done add the lime juice and ½ cup of chopped cilantro and stir to mix.
- To build the burrito bowl divide the rice into four bowls. Then add the spicy walnuts, the black bean sauce, and some chopped Romaine lettuce.
- Optional: Top with sliced avocado, spicy avocado vinaigrette, and salsa before serving.
